Business owners announce changes to Sammamish restaurants, grand re-opening event

Sammamish residents Rich Radcliffe and Paul Wedeberg announced the completion of their visionary team with the appointment of new CEO, Mitch Parrish, a local businessman and lifelong Sammamish resident.

Parrish was brought on as the third member of a well-rounded business and food savvy trio to manage strategy, operations and marketing for their Issaquah and Sammamish restaurants: Uncle Si’s (Sammamish and Issaquah), Uncle Samm’s Lounge and Katie’s on the Lake (Sammamish). The trio’s collective passion for “great food with great people” and their promise to not only offer “phenomenal food but an experience that is just as great” has focused most of their efforts thus far on perfecting the menu and streamlining operations.

“We are excited to introduce Katie’s to our community in a big way,” Parrish said. This introduction includes the renaming of Uncle Si’s Pizza, Uncle Samm’s Lounge and Katie’s on the Lake to: Katie’s, The Bar at Katie’s and Katie’s Lakeside, aptly named after Radcliffe’s teenage daughter.

New names and signage is not all that is changing; customers can expect an updated décor including brick, stucco and wood walls, new lighting and finishing touches throughout, creating a noteworthy and distinct ambiance for each restaurant.

Residents will be invited to an exclusive private party in November, prior to the grand re-opening in December, where they can enjoy tapa-style sampling from the various menus, take a tour, enjoy live entertainment and much more. The grand opening, currently slated for early December, will include activities for kids, live entertainment and free giveaways. Katie’s plans to partner with a local charity and donate a percentage of all the proceeds raised during the events.

“As Sammamish residents ourselves, we are committed to giving back, helping our community and showing them the same support they show us,” the trio said.

Radcliffe first opened Uncle Si’s Pizza with one location in Sammamish and another in Issaquah in 2016. His reasoning was simply to bring “great food to the neighborhood.” He feels they are past the major kinks that need to be ironed out when first opening a restaurant, and, “have had a lot of trial and error. There are certain things on the menu that I’d say I’d never have and they are now there after the chef made them for me.”

Radcliffe introduced Uncle Samm’s Lounge and Katie’s on the Lake in late 2016, which are located right next door to Uncle Si’s in Sammamish.

“We wanted to create a great place to dine close to home so you don’t have to trek through traffic and enjoy it. When it is date night, you will know it’s date night.”

With Katie’s opening its doors just last February, a tucked-back location and solely word-of mouth marketing, “many residents just don’t know we are here. We have yet to have our grand opening, so we see this as the perfect opportunity.”

Katie’s plans on communicating the transformation over the next six weeks via social media as well as reaching out to the residents directly with exclusive invitations to the upcoming events.
